What the heck is bifteck hache I hear you asking? And, basically, it is a French style of hamburger. ‘Bifteck’ is the French word for steak, while ‘hache’ means chopped. It’s kind of a fancy way of saying Salisbury steak because French terminology always sounds more pleasant.
I love a good hamburger, and I love when things sound exquisite, and so this Keto bifteck hache recipe is absolutely perfect for me. To add a little extra French flair to the chopped steak we added some fresh herbs, and the final product is delicious.
Do You Need A Specialty Ground Beef?
The short answer to this question is no. Any ground beef that you can purchase at your local grocery store will do just fine. Generally, the store bought ground beef is made from trimmings and tougher cuts of roast.
However, if you do choose to step up the game and grind your own beef, you can make it tastier by choosing quality products. A sirloin or tenderloin are the ideal cuts of beef, and using these to make a burger can make a significant difference.
Do I Have To Do Anything Differently?
Again, not really. This really is just us giving a delicious burger a fancier title. It is completely okay for you to prepare your burgers the way you normally would, just with these fine ingredients.
This is also a great way to say that you are eating a burger without a bun. Try it at the next barbecue you are at and somebody asks why you are not eating your burger on a bun. “Oh, I am just enjoying it as a bifteck hache.”
Make Some Additions To Your Bifteck Hache

- 2 Tablespoons (30 ml) ghee or coconut oil, slightly melted
- 1 onion, finely diced (divided into 2 portions)
- 1.5 lb (680 g) ground beef
- 1 egg
- 1 Tablespoon (2 g) fresh thyme leaves
- Salt and pepper to taste
- Additional ghee or coconut oil to cook with
For the sauce:
- 1/2 cup (120 ml) beef stock or bone broth
- 2 Tablespoons (30 ml) additional ghee
- 1/4 cup (8 g) parsley, finely chopped
- Place the 2 Tablespoons of ghee or coconut oil into a frying pan and cook half the diced onions in the pan until they turn translucent.
- Let the onions cool and then add them (including the oil in the pan) to a mixing bowl with the ground beef, egg, thyme leaves, salt, and pepper.
- Mix well and form 8 patties from the meat mixture.
- Cook the patties in a frying pan with additional ghee or coconut oil until both sides are well browned (make flatter patties if you prefer the burgers to be well-done).
- For the sauce, pour out the remaining oil from the pan, add in the 2 Tablespoons of additional ghee and saute the rest of the diced onions. Then add in the beef stock and reduce the sauce down for a few minutes. Add in the parsley and serve the sauce with the burgers.
