Why Can’t I Just Buy a Bottle?

I know, I know. This is an internal struggle I’ve had with myself as well. How bad can a bottle of salad dressing be?

And really, I’m only going to be using a little bit, right?

I hear you. But there are a few reasons I hope I can convince you to make it yourself.

Surprisingly, it’s not the carb content that makes me shy away from store-bought Caesar. It isn’t one of the sweeter dressings, and most products don’t have gobs of sugar in them.

But, I did see some ingredients that don’t pass muster for me. Soybean oil is a common culprit. There are good oils and bad oils for keto, and soybean is one to avoid – this article breaks it down.

Cheese is also a common ingredient. While some will argue that cheese is keto, I recommend avoiding dairy because many people don’t tolerate it well (even if they think they do).

Finally, like many mass-produced foods (or food-like substances) there are usually a bunch of ingredients at the end that sound like a science experiment.

Avoid, avoid, avoid.

How to Make Authentic, Creamy Dressing

Instead of cheese and soybean oil, this keto Caesar has a base of mayonnaise and Dijon mustard.

This is going to give you that really thick, creamy texture – just like a good Caesar should be.

Next comes the anchovies (you can leave them out if you must). I will say that these tasty little guys make for an awesome dressing though.

It’s fine to buy the canned kind available at most grocery stores. You may also be able to find them in Italian markets.

If they’re past their prime, you’ll know – spoiled anchovies have a wicked stench. As with pretty much any food, if it reeks, don’t eat it.

Last but not least, you’ll add some garlic cloves, salt, and pepper. It is pretty garlicky, so you may want to have a mint handy if you’re eating this at work.
