Keto Cashew Cheese Recipe

Perhaps you’re lactose intolerant. Maybe you’re keto (OK, if you’re here, you’re probably on keto). You might even be both. Whatever the case, this keto cashew cheese recipe will be your new favorite.

No Dairy, No Problem

It’s hard to give up dairy. Whether your body forces it on you or you’re just trying to eat foods that are less processed, giving up grilled cheese sandwiches, ice cream, or just a cold glass of milk can be tough.

But what if you could have the best of both worlds? Imagine sinking your teeth into a cheesy delight and not even feeling guilty about it. This fantasy can be a reality.

Cashews are delicious all by themselves, but they really become a miracle worker when your cheese cravings are strong.

I will say that this isn’t the cheapest recipe in the book. If you purchase many nuts, you know that cashews are on the pricier end of the spectrum.

I recommend buying in bulk and keeping an eye out for sales. That can take some of the sticker shocks away from this recipe.

Fortunately, there aren’t many other ingredients you have to worry about, so that helps keep your cost down.

How to Make Great Cashew Cheese

There are some things you should know that will improve the quality of your DIY cheese.

First, it’s very important to soak the nuts. This will make them easier to blend and add necessary moisture to the batch. If you don’t, the result could be dry and chalky.

Make sure you drain the nuts before putting them in the blender or food processor. You don’t want too much moisture either. Balance is key.

Make sure you use a food processor or high-speed blender that is up to the task. If it’s not powerful enough, your equipment will struggle to cut through the cashews.

How to Enjoy Cashew Cheese

Cheese has a lot of different varieties, so it’d probably be good to have an idea of what to expect with this cashew cheese.

This cheese is a soft cheese that’s more like ricotta or cottage cheese. It’s not super smooth, but it’s got a bit of texture to it.

There are plenty of ways to enjoy it. Here are a few:

  • Spread on Keto pizza crust
  • Eat with Keto crackers
  • Pair it up with some 100% dark chocolate
  • Enjoy it with a spoon (but not too much!)
  • Dress up your salad

Step-by-Step Instructions

Step 1: Place the raw cashews in a bowl.

Step 2: Add fresh cold water so that it covers the cashews.

Step 3: Let the cashews soak overnight. Place a towel over the bowl to stop dust or anything else falling in.

Step 4: Drain and wash with fresh cold water. Add the soaked cashews, coconut oil, salt, and fresh water to a blender and blend well.

Cashew cheese tastes like ricotta or cottage cheese.

Instructions

  1. Place the raw cashews into a bowl of room temperature water so that it covers the cashews, drape a paper towel or tea towel over the bowl to prevent dust settling, and soak overnight.
  2. Place the soaked cashews, 1/4 cup fresh water, salt, and coconut oil into a blender and blend until smooth.
