Keto Ground Beef Stroganoff Recipe

This Keto Ground Beef Stroganoff recipe is the perfect weeknight dinner for when you’re tired of meatballs and stir-fries. With a creamy mushroom sauce over perfectly browned ground beef and tender zucchini noodles, this low carb version of the classic Russian dish is sure to be a hit.

A Brief History of Stroganoff

Beef stroganoff is a dish that was once prized by wealthy Russian families. In the nineteenth century, the Russian upper class had an affinity for all things French. In fact, wealthy Russian children were commonly raised bilingual, speaking both their native Russian, and glamorous French. Many of these families had second homes in Paris and staffed their homes in Russia with French maids and chefs.

Beef stroganoff is a fusion of French technique with Russian comfort food. The pan sauce with mushrooms and onions is quintessentially French while the beef in a creamy sauce recalls a popular Russian dish made with beef and sour cream. The resulting dish is creamy and hearty, perfect for a cold Russian winter or a last-minute Monday night dinner.

Keto-fying A Classic

The original beef stroganoff recipe is far from Keto-friendly. It is full of dairy and carbs, and some versions can be quite heavy.   • Coconut cream replaces the cream of mushroom soup, no mystery carbs are sneaking into this stroganoff, and no dairy either!
  • Coconut yogurt can serve as a stand-in for sour cream, it’s optional but adds a nice tang that cuts through the richness of the meat and the coconut cream.
  • Regular noodles are a big no-no if you want to stay in ketosis. This recipe replaces them with zucchini noodles, which has the added bonus of lightening up the whole dish.
  • Salt and pepper are a must for any savory dish!

  • 2 Tablespoons (30 ml) ghee
  • 1/2 onion, diced
  • 1 lb (450 g) ground beef
  • 10 mushrooms, diced
  • 2 cloves garlic, peeled and diced
  • 1/2 cup (120 ml) coconut cream
  • 1/4 cup (60 ml) coconut yogurt (optional)
  • 2 zucchinis, made into noodles
  • Salt and pepper, to taste


  1. Add ghee to a saucepan and saute the onion and brown the ground beef.
  2. Then add in the mushrooms and garlic and saute for 2-3 more minutes.
  3. Add in the coconut cream and simmer for 10 minutes.
  4. Season with salt and pepper, to taste.
  5. Remove from heat and add in the zucchini noodles and stir in the optional coconut yogurt.
